Changes

The time has finally come for me to reveal my new and improved blog. I really wanted it to be perfect before showing it to you, but like everything else in my life, it is a work in progress. ;)

Some of the sections are still under construction, but from this point on I will be blogging from my new domain. Please join me at BitesnPieces.com. Although my blog name has changed, I assure you I am still vegan and all of my recipes are as well. I hope you enjoy it!

Over the past month I have received quite a few amazing product samples in the mail to review on the blog. Since I have been pretty busy setting up my new blog, I haven’t had a chance to devote much time for individual reviews of each product, so I have decided to review them all together into one post. I also had some fun and made little collages out of my pictures instead of showing you the photos one at a time. Are you ready to learn about some healthy, vegan products from four different companies? Here we go!

Foods Alive

Foods Alive sent me some of their organic flax dressings and raw flax crackers to sample. I tried four flavors of the crackers and two salad dressings. I highly recommend the Mike’s Special flax oil dressing. This stuff was delicious on salads and a great way to incorporate more omega-3 fatty acids into my diet. As for the crackers, they were light, crispy, and flavorful.

I especially enjoyed the Mexican Harvest and Hemp flavored crackers, and I would definitely purchase them in the future. Sadly, I cannot say the same for all of them since the Onion Garlic flavor was almost inedible! Biting into a cracker was like eating an entire clove of garlic. I am a huge fan of garlic, but these were just too strong for me. You have been warned! Aside from the garlic overload of that one flavor, Foods Alive crackers and dressings are a tasty way to enjoy the healthy benefits of flax.

Endangered Species Chocolate

Can you ever have too much chocolate? I don’t think so. Especially when it is dark, rich, vegan chocolate that comes from an ethically sound company. Aside from making sure that all of their chocolate is 100% fair trade, Endangered Species Chocolate donates 10% of their net profits to support species, habitats, and humanity. If that’s not a reason to indulge in some high quality chocolate, I don’t know what is. They also have some very interesting and unique flavors such as dark chocolate with cacao nibs, yacon, and acai. Good stuff. :)

Falafel Chips

Flamous Brands was generous enough to send me a large box of their spicy and original flavored falafel chips. I wasn’t sure what to expect from these chips, but I was pleasantly surprised by their authentic falafel flavor. They actually taste like the perfect fusion of corn chips and falafel. Aside from being deliciously crunchy and addictive, these chips were full of healthy, organic ingredients. Each serving contains 4 grams of protein, 4 grams of fiber, and 16% percent of the daily recommended iron allowance.

The chips were awesome with hummus and very good with salsa as well. My only complaint is the packaging. The chips are packaged in a plastic bag, which is inside of the brown bag you see in the photos. I think it would be less wasteful if the company only used one bag, but that’s just my opinion. Still a great product!

POM Wonderful

POM is all over place these days, so when the company contacted me to see if I would be interested in sampling the juice, I answered with an enthusiastic yes. I have always been curious about this popular pomegranate beverage, and finally I got to try it for myself.

I found POM a bit too sweet to drink straight out of the bottle and I had to dilute it. I see this as a good thing though, since the flavor is concentrated, you get more out of a bottle. I was able to use one 8oz container to make about 4-5 of my own refreshing POM spritzers by mixing the juice with seltzer. I could definitely see myself drinking these spritzers throughout the summer to get some extra antioxidants into my system! I’m really looking forward to using the juice in a recipe some time soon.

That’s it! I am so lucky to have been able to try these complimentary products. As you know, I get really excited to try new things, especially healthy vegan ones. Have you ever tried any of these products?

You may be wondering where the heck I have been lately. I realize that my posting has been sporadic and random as of late, but I promise I have a good excuse! Currently, I am in the process of completely revamping my blog and acquiring my own domain. Not only will there be a new design and layout, the blog is getting a new name as well.

I am hoping to have it ready in a couple of weeks, but I’m not really sure how long it will take.  Since I’m not as computer savvy as I would like to be, the blog makeover is taking me quite a while to complete. The whole thing is one big (time-consuming) learning experience, but I am having lots of fun along the way. Since I haven’t done much in the kitchen lately, I will leave you with a generous dose of cuteness. :)

only to realize that napping is much more fun that working.

Please excuse my messy desk! It is hard to keep it organized when Little consistently plops his body down on top of whatever I am working on. He’s so cute I basically let him get away with anything he wants. Sigh.

Before I launch my new site, I would love to get some opinions from you guys. What are some things you would like to see on my blog in the future? More recipes? Products reviews? Home improvements? Gardening? Cute pet photos? Miami life? Cooking tutorials? I’m open to suggestions and I would love your input! Although I have never given birth or raised a child, I still consider myself a mother. Just because my “kids” are covered in fur, doesn’t mean I don’t have to do my fair share of motherly duties. Three demanding, spoiled pets are quite a handful!

I couldn’t think of a better way to spend my special day then to enjoy a delicious brunch at my favorite vegan restaurant, Sublime.  It is located in Ft. Lauderdale, which is about an hour drive from me, but it is always well worth the trip. Since we made it to Ft. Lauderdale before the restaurant was open we decided to take a walk on the nearby beach.

It was so hot!! I think the high reached 94 degrees yesterday. My sister and I couldn’t resist dipping our feet in the sparkling blue water.

Good thing we were able to rinse off the sand before heading to brunch.

Finally they opened the doors and let us in, and within minutes I was in line for the buffet. I loaded up my plate with a little bit of everything they had to offer. Can you believe all of this is vegan?

There was mac and cheese, breakfast potatoes, Waldorf salad, tempeh bacon, couscous, scrambled tofu, Belgian waffles (with whipped cream!), sushi, and fruit. I also had a very refreshing Bloody Mary to go along with my meal.

Brunch wouldn’t be complete without dessert, now would it? Although I was stuffed at this point, I managed to try some apple cobbler and carrot cake too.

I was way beyond full and very thankful for wearing a loose-fitting dress as opposed to something with a tighter waistline. Before leaving, I took a picture with Sublime’s owner, Nanci Alexander.

Every single time I have been to Sublime, Nanci walks around to each table making sure that the service and food are always up to par. It is nice to go to a restaurant where the staff really cares about the customers and about animals as well. 100% percent of Sublime’s profits go to promoting animal welfare and the vegan lifestyle. How awesome is that? If you are ever in Ft. Lauderdale, a meal at Sublime is a must!

If you follow my blog regularly, you know that I have recently become obsessed with Daiya vegan cheese. Since I discovered this stuff, I keep thinking up ways that I can use it in almost everything I make. Sadly, it is a bit on the pricey side, so I can’t get in the habit of buying it all the time. Here is a loosely based recipe that I came up with the other day, and it really puts Daiya to good use.

I kind of made it up as I went along, so the measurements are not very precise. This pasta bake is really easy to make, and requires a minimal effort (no veggies to chop). I usually don’t eat a lot of processed or canned food, but I had a bunch of different things I wanted to use up at once. Give it a try!

Easy Cheesy Chili Pasta Bake

  • 1 can white beans (drained)
  • 1 can diced tomatoes
  • 1 can Rotel spicy tomatoes
  • about 1/2 package or Boca crumbles, or other favorite ground beef substitute
  • 1/2 pound pasta of choice
  • cumin, garlic powder, chili powder, salt & pepper to taste
  • Daiya cheddar cheese (or your favorite cheese substitute)
  • a few chopped green olives (optional, but good)

Pre-heat oven to 350 degrees. Meanwhile, cook pasta according to package instructions, drain, and set aside.

In a lightly oiled skillet over medium heat, cook crumbles until “meat” is lightly browned. Lower the heat and add both types of tomatoes, beans, and olives if using.

Add generous sprinkles of cumin and garlic powder, a bit of chili powder, and adjust seasoning with salt and pepper if needed. Stir to combine and allow to simmer on low heat for a few minutes. Stir in cooked pasta and pour about half of the mixture into a casserole dish and top with a handful of cheese. Add the rest of the pasta mixture to the casserole and top with more cheese. Place in oven and bake for 15-20 minutes or until cheese is melted. Remove from oven, allow to cool for a bit, and dig in!

Like I said, not all of the measurements are precise, but if you don’t mind experimenting with the spices a bit, I’m sure it will come out delicious. Look at all the melty goodness going on here.

This may not be the healthiest dish round, but it is definitely vegan comfort food at it’s finest. Enjoy!

During the summer semester between my freshman and sophomore year of college, I had a ritual of studying with a friend (hi Francisca!) almost everyday at Barnes and Noble. There was a Starbucks cafe inside, and every time we were there, we would get caramel frappuccinos complete with whipped cream and all the trimmings.

It’s no wonder I gained a few pounds that summer, but that’s besides the point. My regular frappuccino consumption was long before my vegan days, as the blended coffee beverage contained a pre-made base with dairy ingredients. It has been over 5 years since I have had a frappuccino and I have missed them dearly.

So why did I drink a coffee frapp this weekend and enjoy every last sip? I am happy to announce that Starbucks is changing the way they make their popular frozen beverage, which will now include the option of using soy milk for those of us who want it. As you can imagine, when I learned that I would get to enjoy my beloved frappuccino again I was overjoyed. :)

There is nothing like one of these on a hot summer day!  It’s not like I am going to have them all the time, but it is nice to know that I have an option if I want to indulge in some sweet, frozen coffee goodness. And by the way, it tasted just as delicious as I remember it tasting!

As far as I know, the new frapps are being “tested” at multiple Starbucks locations right now, and should be widely available in the beginning of May. If you want to enjoy your own vegan frappuccino, be sure to avoid whipped cream, caramel sauce, or the “light” frappuccinos, which all contain dairy. Other than that, simply ask for soy milk and you should be all set! With all of the new healthy snacks available and the prospect of soy frappuccinos, Starbucks is becoming more vegan friendly than ever. :)
