
Okay, I admit it. I have an obsession with a new food find: canned fava beans. I discovered these beauties last week at the local Middle Eastern market, and boy am I glad I did.

I know this probably does not sound very appetizing, but these beans are SO good. They come already seasoned in a “sauce” of olive oil, lemon juice, garlic, and other spices. When heated up and topped with diced tomatoes and parsley, they turn into a delicious and hearty bean soup. Today, I decided to try the fava beans cold, and tossed them with some sun-dried tomatoes and tons of fresh basil. I would have loved to add more fresh veggies, but I was all out. I ate the beans with some roasted butternut squash, and it made for quite a good concoction for Vegan MoFo!

There are definitely going to be more fava-related meals in my future. I just can’t get enough!

I love all beans – why have I not tried Fava Beans? I must take care of this.
If you are a bean lover, you should definitely keep your eyes open for fava beans. SO good!

I found them at a Mediterranean market here in Miami, so search your area for something similar. I’m sure most regular grocery store sell fava beans, but the trick is to get the pre-seasoned ones. The sauce is what makes them so delicious.
