Sometimes, there is nothing better than a good sandwich. Take this sandwich for example:

It basically has everything I could ask for: Field Roast for the “meat”, vegan cheese, sprouts, sweet onions, tomatoes, Vegenaise, spicy mustard, and baby spinach. On some fresh whole grain bread, this sandwich was amazing (aside from the fact that it totally fell apart when I tried to eat it)! All it was missing was a dill pickle on the side.

Oh, and if you haven’t tried Field Roast, you are seriously missing out. I think is my favorite faux meat on the market. They sell individual packages of deli slices, but to be more economical, I buy the Celebration Roast and slice it up myself. You can find it among the salami and cold-cuts section at Whole Foods, and trust me, it makes an awesome sandwich.

This is BY NO MEANS my fav and i’ve never had it before today, but i just made a “leftovers quesadilla” with some stewed pinto beans, italian and cheddar daiya cheese and some canned butternut squash (seasoned with some sea salt and cinnamon) and it was surprisingly good considering how bizarre it was! yours looks so light and healthy and yummy!
I love gigantic sammies!! I love them with avocado and eggplant!! Also hummus and veggies sammies are de-lish!
I love salad sandwiches too and I need some avocado in them!
mmmmmmmm what is it about onions and tomatoes that go so well together? I love mozzarella, tomato, pesto (or just mozarella tomato basil. Fabulous
I’m definitely a fan of Field Roast too. Though, sometimes it is a bit too salty. The sandwich looks great!

The key to a good sandwich is the bread. I also love avocado and sprouts. Tofu, avocado, sprout sandwiches are delish!
Sadly, I don’t make many sandwiches… Not sure why, but I just don’t think of them often. When I do though, it’s usually got hummus, sprouts, avocado, tomato, and roasted red peppers. Perhaps a drizzle of some herb-infused oil if I’m feeling especially decadent.
This one pictured above makes me want to make one of those rare sandwiches right now!
