Good afternoon! I hope everyone is having a great Monday so far. After spending my weekend doing chores and lots of cleaning, I actually feel prepared for the week.
Today’s breakfast was a simple and filling bowl of oatmeal and a cup of coffee. Lunch, however was a bit more exciting. I had some leftover tofu salad I made over the weekend on a whole wheat wrap with sliced zucchini.

The salad was a concoction of mashed tofu, Vegenaise, spices, diced celery, and chopped collard greens. It tasted a bit like egg salad and went really well with a side of okra pickles and a fresh Honeycrisp apple.

These okra pickles are my latest obsession. They are really good, but do not taste as hot or spicy as the label suggests.

After lunch I had this refreshing coconut water flavored with pineapple:

Coconut water should always be consumed in a tropical setting as far as I’m concerned. It tastes even better that way.

that’s one deeeeelicious looking wrap. i never would have thought to toss in some chopped collards. nice! i first heard of pickled okra about 2 weeks ago & i need to remember to keep an eye out for it at the store. it sounds like something i’d love – and i’ve gotta see if i can get my hands on some of the pineapple flavored coconut water, too. i love me some coconut water & pineapple is one of my favorite fruits.
Hey girl! Great lunch. I’ve never had an okra pickle- where did you find them? Apples are amazing right now- their flavor just really picks up in the fall
Itzy, I found the okra at Publix near the relish and other pickles. I have tried a couple of brands, but I like the Talk O’ Texas the best. Their pickles have a better flavor and are more crisp than the others I tried. I hope you can find some near you.
The wrap looks amazing.. what kind of tortilla do you use?! Everytime I attempt to “Wrap” it looks so ugly and everything falls out.
