Although I am already vegan, I think it is wonderful that so many people in the blog world are embracing the Vegan 4 A Day Challenge. In honor of this day, I am going to share some delicious vegan treats with you.
Yesterday I made these awesome Pumpkin-Raisin Oatmeal Cookies from the Happy Herbivore blog. The recipe seemed great as is, but of course, I can’t just follow a recipe without making my own changes to it.
Instead of raisins, I added a quarter of a cup each of chocolate chips and chopped walnuts. I also added about 2 more tablespoons of pumpkin than what was called for, as well as a teaspoon of vanilla extract and a pinch of salt.
These cookies came out great and are very low in fat (they are fat-free without my modifications). They reminded me of a bowl of pumpkin oatmeal, only in cookie form. I recommend them for a great on-the-go breakfast or mid-afternoon snack.
This morning I topped a couple of the cookies with some peanut butter and ate them with a tall glass of chocolaty Amazing Grass. Who doesn’t love a quick and healthy breakfast like this?
The cookies were even better with peanut butter on top, but then again, most things are.

I just found your blog and read your post and your about page. You sound nice and I think your pictures are terrific. I think I will add you to my blogroll, feel free to do the same (though I am not vegan, I like adding more vegan ideas into my eating).
WOW! The cookies look so fabulous. Question- what do you use in your coffee- I’m really want to find a dairy sub……just haven’t found anything that makes it creamy (and I even use skim milk so I don’t know THAT much creaminess!)
Erica, the best vegan creamer I have tried is the new So Delicious coconut milk creamer. It makes coffee SO creamy without adding too much extra flavor or calories. Since it can be pretty expensive though, I usually get Silk creamer (original flavor) which is my second runner up. It’s definitely more creamy that soy or almond milk, and it doesn’t separate at all. If you can find either of these, you should give them a try.

Mmm, super-hearty oatmeal cookies… That would really hit the spot right about now! They really look fantastic, and relatively guilt-free.
I’m so glad you said that about the creamer — I’ve been using almond milk for #VeganWeek and it’s just not “creamy” enough!
