It was began getting employed back in the 1940′s.
Will have to do some investigation on who probably started out it… will get back with you.
Edit:
Back – just did a fast search on Google and discovered this details:
The word “vegan” was first utilised by Donald Watson in 1944. It came from the word “vegetarian” by employing the last two letters (an) and the very first a few letters (veg). Watson’s reasoning behind this was that veganism begins with vegeterianism and carries it through to its logical ending. Watson, among other members of the Vegetarian Society, desired to begin a group of non-dairy vegetarians. When their proposal was turned down by the society, Watson and his followers determined to begin their own organization.

I’m not 100% sure but, I have seen shirts that say vegetarian-cut the crap and ‘etari’ are dashed so they look like you should cut them out so it says ‘vegan’.

The term was created by the founder of the Vegan Society, who didn’t like that vegetarianism had evolved to include those who eat dairy products and other animal derivatives. Obviously, it comes from the word “vegetarian”.
